Best lasagne

Please share your best lasagne for fussy eaters. dc likes minced meat and has enjoyed lasagne in the past but haven't made it in a long time.

Not sure I should sneak in some veg or better not, smooth and creamy texture should be best and veg on the side perhaps.

Whats your kids / teens favourite lasagne?

And what sides and pudding to go with it?

I just make a classic ragu, which includes soffrito and some garlic, red wine, stock etc. simmer for 45 minutes to an hour then thicken with beurre manie.
Fresh or home-made lasagne sheets, hone-made bechamel with infused milk. Layer up, grate over a mixture of pecorino and parmesan cheeses. Bake in the oven for 35 to 45 minutes until golden.
Serve with green salad and a tomato salad, no need for extra carbs unless you are feeding a team of 15 stone rugger players.
Freeze any leftovers in individual helpings.

I use sour cream, milk and Gruyère cheese instead of bechamel, it’s amazing and so simple, just mix them together, no cooking

I mix red peppers into the mince, yellow or green too if I'm trying to stretch the mince out too, plus if the pasta isn't appealing to people I will use some very thinly sliced potato instead of lasagne sheets. Works to reduce gluten too if anyone has issues with it.

I usually do just a green one with a sharp dressing as a contrast to the lasagne
