to feed more people?

I’ve made a coconut cream curry sauce that I was planning to chuck some prawns in for dinner tonight for 4 people-but now I need to feed an extra 2 and I really don’t want to go shopping. Is there anything I might have in to bulk it up a bit. There’s plenty of sauce but only enough prawns for 4. Any other curry I’d chuck in a tin of chickpeas or cannellini beans but not sure that would work with this one. Ideas? I'll make more breads of course-but I think it’ll be a bit sparse….

I think that would work or butter beans. Lots more veggies to chuck in? And add some sides?

Courgette, aubergine, bamboo shoots, baby corn, snow peas, mangetout, beansprouts, mushrooms, tenderstem broccoli... For protein, you could add tofu and I don't see why you couldn't add beans either, lentils are often added to coconut curries!

I don't see anything wrong with adding chickpeas, I think they'd be fine. Or if you keep thise pouches of ready-to-eat lentils that would work too. I always have a variety of veg in my fridge so in your shoes I'd be able to put in some broccoli or green beans or mushrooms or some yellow peppers, any if which would work happily too, but without knowing what's in your larder and fridge it's a tricky question to answer

Add some vegetables - aubergine , courgette , leaves (spinach) - if you want you can take out some gravy and make 2 dishes. So add some chicken / tofu in the other one.

I think the beans would be fine maybe not the chickpeas or lentils and extra veg would be good

Cook a second curry: daal is easy and you probably have the ingredients.

Vegetables, whatever you have and beans or if you have lentils, make a dal to serve alongside, cheap as chips too (cheaper!) just red lentils, onion, garlic, chilli, ginger, turmeric, a stock cube plus a bit of chopped coriander if you have it (or fry off curry leaves and cumin seeds to top off)

I think adding pulses would be odd. I would add lots of fresh veg, as others say. A nice thing you can make with a creamy curry is the kind of rice where you cook it to almost-done then put it in a heavy-bottom pan with lots of butter and let the base cook until it's all golden and crunchy. It is more substantial than ordinary rice, obviously.

I always add veg from the freezer so for the curry I would add green beans, mixed peppers and spinach although spinach won't add a lot but the colour looks great. I also have in chopped frozen coriander to zhuzh up curries.

I would think chickpeas would go too, I always have a tin of those in. My Tarka Dhal recipe is literally store cupboard and freezer stuff, tinned lentils, tinned tomatoes, onion, ginger and garlic (frozen cubes from the supermarket) then spices and stock. I would look to make that, very easy.

@SarahAndQuack that crunchy rice sounds lovely, I shall try that.

Lots of good ideas. I actually have dal in the freezer, so I’ll get that out and maybe do some rice as well as breads! I’ve tried that crunchy rice several times-it’s so delicious when other people make it but I ALWAYS burn it!!

I'd just do a really nice veggie curry side dish. e.g. spinach and chickpeas, or something tomatoey. And chuck in a few nans.
