Red lentils? They will soften into the sauce & make it thicker and less acidic, more like a dahl

Coconut milk?

Make sure you brown (not burn!) the onion at the start. Add a little more spice such as cumin or garam masala and then let it cook a bit longer.

Just sat down to eat the curry I’ve just made! It was very tomatoey but once I added the Garam Masala it’s a bit less so, mine was quite thick as well so I’ve added more water.

Cream

I only have garamasala and some cumin will try a teaspoon of each

Gravy browning. It doesn’t taste of anything but it’ll turn it brown.

Were you using a recipe? I'd add a bit of turmeric.

well if that is all you have and you're not going to a shop there's not much point seeking advice! I like a tomatoey curry personally. GM will definitely make it more curryish though. Remember (this is age-dependent) the Goodness Gracious Me sketch where the cook finished every recipe with "...and a SH*TLOAD of Garam Masala!"?

Eggybreadwithnuts · 07/05/2026 19:41

I added cumin, turmric and GM...perfect thanks

A spoon of sugar to reduce the acidity. And keep some coconut milk in for next time.
