What to do with cold roast pork loin?

Other than sandwiches
It was lovely when hot and freshly roasted but unappealing when cold .

Hugh Fearnley Whittingstall advocates “twice cooked pork sandwiches”. He swears they are better than bacon sandwiches which is controversial but they are certainly on a par. You just heat oil in a frying pan (I use a garlic oil) and fry slices of pork with lots of salt and pepper for about a minute each side. He says one slice of bread must have ketchup and the other mayonnaise. He is a wise man.
If I have enough for a second meal, I favour a recipe from the BBC Good Food website called “Barney’s Monday Night Rice”. I cook the pork as Hugh advises above because extra colour brings extra flavour and then follow Barney’s recipe from there.

Slice really thinly. Dress with a lime, olive oil, cumin and ground coriander seed dressing. Serve with an easy peasy lime coleslaw. Potatoes if you are that way inclined. Delish. I cook pork to serve just like this.

I'd slice it up and put it in slow cooker with potatoes, carrots, swede, onion and add peas towards end of cooking.

Mince with cooked potatoes and softened onion make into rissoles and fry

Fry up in small chunks with some Chinese or BBQ seasoning and add to salad, wraps or stir fry.
