Does anyone have a vanilla or chocolate cake recipe that has oil as it's fat rather than butter or melted butter?

Thanks!

This is good. Look at www.bourtonhouse.com/documents/FLORASCOURGETTECAKE.doc Delicious and works every time.

Oooh, yes please bobblehat if it's not too much trouble.

I have a courgette cake recipe but it's with melted butter... will give this one a try too!

Mrs. B's sounds LOVELY, but to be completely honest I'm after a vanilla version of the recipe - do you think this might work? (I will try the choc one another day!)

In one bowl, mix:
1 Tblspn white vinegar
2 eggs
1/2 cup oil
2 cups milk
1 tsp vanilla essence

In another, big bowl, mix:
2 1/4 cups plain flour
1 cup caster sugar
1 tsp salt
2 tsps baking powder
1 tsp bicarb
