Fresh lime soda (sweet)

I grew up in Oman and fresh lime soda was the best drink, so refreshing and delicious. It’s of Indian origin. Does any know how to make it or have a recipe please? I have tried to recreate it sooooooooooooooo many times and never quite hit the spot and really really want to!

I've just made two bottles for the fridge! This is how I do it (Indian-style). Sorry it is not exact, I tend to do it to taste as that is how I was taught:

Ingredients-- two bottles of soda water, 6 limes, 500ml normal water, sugar.

  • Sugar syrup -- Bring the normal water to bubbling and add a good amount of sugar. Do this to taste you want it to be super sugary because you are making syrup. Let it simmer until it thickens a bit then leave to cool. It doesn't have to be super thick like golden syrup, just a bit thickened from water.
  • Juice 6 limes into a measuring jug, usually I get around 150ml. Pour half the juice into two 750ml glass bottles.
  • Add a small amount of the cooled sugar syrup. Must be totally cooled and be warned, it will fizz right up!
  • Top up to about 3/4 of the glass bottle with soda water.
  • Taste and add more sugar syrup depending on how sweet you want it.

If you like a desi taste, add a pinch of kala namak or shikanji masala to the bottle and gentle shake to mix. Or just leave it sweet as it is. You can store the remaining sugar syrup in a bottle in the fridge for a good few days, I have some 300ml little glass bottles for this. Saves you doing the syrup bit next time!

In India, they sometimes make it for you at the table, it’s literally just lime juice (juice of roughly half a lime, but depends on how juicy, our glass size), sugar to taste. ice and fizzy water. We don’t have ‘soda water’ in the UK, but any fizzy water will do. We use water from our soda stream.

@mindutopia Hey we do have soda water in the UK, I just got 2 bottles from my local coop at 49p per bottle! It is just fizzy water.
