Your best savoury tart/galettes

Hosting lunch for 8 and I'd like to make a couple of savoury tarts/galettes for lunch, to have with side salads. One guest doesn't like eggs so I was thinking one quiche (with egg) and one galette.

But that person also doesn't eat any soft cheese (goat's cheese, ricotta, feta) and I'm struggling to find a recipe without!

Any ideas?

If you can find good tomatoes, I've made a kind of tomato tart with dijon mustard smeared on the base before now. That was alright. You could turn it upside downsy - tarte tatinsy with pepper strips and whatnot to be artistic.

Thank you! Not vegetarian/vegan, anything beyond cheese and egg is fair game! (And grated cheddar/mozarella type cheeses are also ok)

I've been looking at sausage galette type things but they also always have soft cheese like ricotta.

Love the sound of a tomato tarte tatin, but yes I was also a bit concerned about the tomatoes not being great, but if roasted it may hide a lot of sins! I'll research recipes.

Delia’s Christmas book (the later white edition) has a very easy tomato tarte with a shop made puff pastry base, mustard (I think), Emmental cheese & tomato sauce on top.

I've made this filo quiche several times - always a winner. The filling can be anything but I cook it first if it can't be shredded - eg salmon and roast veg or ham and mushroom but the shredded spring veg works really well.

If you want sausage but without the soft cheese this one is good. My kids like it and they have the same issues with eggs, feta etc.

I’ve made this tomato and Parmesan linzer with February tomatoes and it was still divine. Fairly simple to make, time consuming but mostly hands off, and felt special too. Sadly I don’t have a crinkle roller to make it extra pretty.
