Ingredients

  • Tortillas: 8 small (taco-sized) flour tortillas.
  • Filling: 400g - 500g cooked, shredded chicken or cooked minced beef.
  • Sauce: 1 jar (approx. 300g-400g) of mild chili cooking sauce or enchilada sauce.
  • BBQ Sauce: 3-4 tablespoons of your preferred BBQ sauce.
  • Cheese: 100g - 150g reduced-fat cheddar cheese, grated.
  • Optional: Diced onions, peppers, or beans to bulk up the filling.
Instructions
  1. Prep: Preheat your oven to 200°C (180°C fan/Gas 6). Mix your cooked chicken/beef with the BBQ sauce in a bowl.
  2. Assemble: Pour about half of the enchilada/chili sauce into the bottom of a baking dish (approx. 20cm x 20cm).
  3. Scrunch: Divide the meat mixture among the 8 tortillas. Roll them up loosely (like a tube) and place them side-by-side in the dish, "scrunched" tightly together.
  4. Top: Pour the remaining sauce over the top of the tortillas, then sprinkle with the grated cheddar cheese.
  5. Bake: Bake for 10-15 minutes, or until the cheese is melted, golden, and bubbling.

Do you mean the Pinch of Nom Scrunchiladas? If so Taming twins slow cooker enchiladas are similar, although she cuts the tortillas into strips. They're actually very nice.
