I have home made chicken stock, left over chicken, various veg. What’s your best chunky chicken soup recipe? I was considering noodle but I think want something more traditional….

Can’t comment on chunky but this could do. Do stock, add onion garlic ginger red pepper celery parsnips potatoes and any herbs you like. Then blend. I’m sure it’d be fine non blended. Had it today.

Leeks go well in chicken soup, also onion small diced celery and grated carrot plus a tablespoon of pudding rice and a stock cube.

Pearl barley also gives it a bit more depth I find.
My mum used it and so I got used to it many decades ago.
I add onion, carrot, leek and potatoes - just small amounts of each, then boil the carcasses.
Then I add the picked over chicken after blending the above.
And then some cream and lots of white pepper.

Best ever chicken soup

I usually just use rice rather than cous cous but it works with pasta, noodles or even just butter beans.

If you want something a bit different this Greek lemon chicken soup is lovely

Onion, carrot and celery base and sweat for a few mins. Add crushed garlic. Add some dried thyme and salt and pepper. Add stock and a bay leaf. Add chicken and then after, whatever you prefer, noodles, rice, potatoes or pasta. At the the end bang in a tin of sweetcorn with it's juice. If I do it with spuds I tend to get it really thick like a stew and add dumplings. It's good with a couple of table spoons of rice.
