Any tried and recipes for gluten free bread that doesn’t contain xantham gum or ready-made gluten free flour?

im thinking millet, sourgun, teff, oat, buckwheat flours etc.

Porridge bread, tastes delicious (I put pumpkin seeds in for added texture), once it's cool can be sliced very thinly which is good for sandwiches, makes nice toast.

I usually shun low fat yoghurt, but find it good for bread and scones - makes them less cakey.
