Food hygiene, it's me again! Sorry! Cooked lamb, remade into casserole, frozen, then reheated.

Is is safe? We had leg of lamb at the wend, this had been in the freezer. Loads left over so made an apricot and lamb thing for dd and batched up for the freezer. My friend said that was dangerous. Is it??

No, that's fine. Make sure it's defrosted and heated right through.

absolutely fine.

The rule is:

you cannot re-freeze raw or cooked meat.

But if it was raw, and you have cooked it, you are not re-freezing anything, you defrosted raw meat, then turned it into cooked meat, which you froze for the first time.

It will be fine. Your friend has the wrong end of the stick.

That is such a major relief as there were 13 portions and she loved it so I would be crying if I had to bin them. Thanks. I definitely need the food hygiene course though.

You can freeze meat once raw and then once cooked without problems. I think you can be more relaxed about non-meat foods because there's less risk of bugs.

Now I am worried again because when I froze it, it had been cooked twice I guess, once as a roast then as a casserole. Is that dangerous? Although I did just simmer it for 20 mins so a sort of reheat rather than cook. Worried face.

cooked as leg
frozen as leftovers
defrosted
re-made as casserole
refrozen
now defrosted and reheated

i wouldn't cos you have frozen and defrosted the same cooked meat twice, albeit in different recipes

No not frozen as leftovers. Leftovers made into casserole straight away.
