trying to save money/afford food.i am rubbish cook.any easy recipes or book recommendations.we are family of 5 with 2 full time veggies ,one full time meaty and 2 who change depending on mood/whats for dinner etc.

Hi - a friend gave me a recipe for a veggie lasagne and everyone in family likes it - even carnavore - it's a bit 'thrown together' so no exact amounts.
You need - some fresh lasagne sheets (so no boiling), jar of tomato lasagne or pasta sauce, some grated cheddar cheese, tub of ricotta cheese, onion, courgettes, any other veg u like & garlic. Cut courgettes into slices and slice onion up small.
Put onion, courgettes & garlic in saucepan with a little oil and stir fry until cougettes soften/go brighter green. Add half cheddar cheese and about half ricotta cheese to mixture in saucepan. Heat tomato sauce in microwave (in a bowl not the glass jar!!) for about 90 seconds.
In an ovenproof dish layer pasta sheet/tomato sauce, then veggie mix. Blob remaining ricotta cheese over top and sprinkle rest of grated cheddar over it. Bake in 190 oven for abot 20 mins - until top is browned. Tastes great and does about 4 people - can be served with some garlic bread or salad to make it go a bit further

thankyou-sounds yummy!i used to make lasagne but it was from a recipe in a book i gave away so thats great!
