Left over risotto

I have some left over risotto and I am looking for inspiration that is not arancini or some sort of 'cake'?

Maybe out an unexpected topping on it - something a bit spicy, crispy… maybe sort of gumbo prawns, or chorizo oil, or harissa veggies…

Up the saffron for a milenese risotto with a crispy chicken (or cauli/squash) cutlette

I did a frittata type thing in the end, it was OK but if I do it again I will addd a lot more seasoning.

Use it for stuffed peppers of course!
