What's for tea tonight?

Mines smashed burgers, lettuce, gherkins, ketchup and American cheese. With mini pork and pickle pie and a slice of polish smoked bacon. Lovely. Had no lunch.

I put some lamb shanks in the slow cooker at about 12 before I went to a friend’s afternoon birthday party. I’ve got some microwave colcannon mash in the fridge and I’m on the bus home and I’m a wee bit tiddly. I’m feeling ridiculously pleased with myself for being this organised. It’s not the normal state of affairs but I’m acing today. Go me!

Yummy homemade chicken soup from left over roast chicken yesterday (made with potatoes, onions, garlic, spaghetti, stock, sweet corn, black pepper) with crusty bread then American cheesecake and cream.

We had rice and peas (the Caribbean one with coconut milk, kidney beans and chilli) with spring greens and fried chicken that I marinated overnight in green seasoning. Plus a celeriac rosti and a coriander yoghurt and some random turnip from the garden.

It all sounds very complex but it was quite an unusual mix of leftover sides, spare chicken and garden bits we had to use up 😂

Yes! It’s:
2 spring onions
10g fresh parsley
10g fresh coriander
10g fresh thyme
1 chopped scotch bonnet
5g piece ginger
3 garlic cloves, chopped
Juice of 1 lime
1 tbsp vegetable oil
1/2 teaspoon paprika
1/2 teaspoon all spice
1/2 teaspoon coriander powder
1/2 tbsp scotch bonnet hot sauce

Make sure to blend it all together and adjust to your liking. Marinate the chicken for 2-24 hours. Then dip in seasoned flour and shallow fry.

Roast beef and all the trimmings. We have lots of sporty kids and basically Sunday is either spent watching or travelling to matches. I don’t have time to do a roast so I try and do one in the week.
Wednesdays are a quiet evening for us.

Chicken and leek ‘lasagne’ tonight. I’m working my way through a load of TikTok recipes I’d saved and this one last time was a massive crowd pleaser. Plus it’s got loads of veggies in it but the kids haven’t realised that yet 😂

It’s fend for yourself here tonight. I’m recovering from a hospital appointment from the start of the week and I’m in a lot of pain from it so can’t handle cooking much. We had a takeaway last night so tonight is just what people find in the fridge or freezer. I’ve had cheese on toast and not sure what DC are having (they’re 22 and 18 so can easily cook for themselves). DH is at work so he’ll be having whatever microwave meal he fancied from Asda.
