Baguette recipe, no sourdough

Love sourdough but dont time the time for the mumtiple cycles of raising and kneading…
so this is my recioe for a french baguette. It is good but i am looking to imrpove it, maybesomeone can help. It is a bit too compact, not airy enough.
5g of yeast (i use alinson easy yeast)
150gr of water
mix for one minute
add 250gr of bread flour (mariage)
5g salt
rest for one hour
knead for a bit
make two baguettes
rest for another hour
cook

how can i improve it ? Many thanks

The recipe sounds fine, but I think you're supposed to knead it for quite a long time. My bread machine does 2 sessions of kneading and that makes really light fluffy bread.

I think you need to knead if for ages and prove it twice.

I use something like 450g bread flour, 7g yeast, big pinch of salt, 20g soft butter and a glug of olive oil. 300mls warm water. Mix in the yeast and salt on opposite sides of the flour at first as salt kills the yeast apparently.
Knead for about 25 mins if you can.
15 mins will do though.
Then prove for two hours. Make into baguette shapes then prove again for an hour and add an egg wash (you can just add flour)

Then cook on gas mark 8 for about 20 mins.

also any recommendations for a baguette tray? Perforated or not?
