Excess milk

It’s either feast or famine in our house when it comes to milk. I’ve ended up with 2ltrs of semi skimmed milk going out of date in the next few days and no room in the freezer. What could I make to use it up?

Pancakes for breakfast tomorrow.
Macaroni cheese for one meal
Muffins usually have some milk in them.

It should be still fine to use for several days after it's use by date, just smell it before using, you'll know if it's gone off. I regularly use milk a week or so after the date on the bottle, I only use it in tea so a pint lasts a long time.
But, if you are wanting to use it up, I'd go for a homemade rice pudding, or make paneer cheese with it.

Pancakes (we like the drop-scone type). These will also keep in the fridge for a few days once made.
Sour it with lemon and use to make soda bread.
Cheese sauce for pasta bake/mac and cheese.
But I agree with the poster above - it should still be ok for a good few days in the fridge.

But milk lasts waaay past the "best before". I go by smell with dairy.

Cheese sauce

paneer cheese (basically boil the milk & use lemon juice as rennet) . You can use in an Indian recipe or scramble with veggies like a tofu or egg scramble . paneer uses up lots of milk & turns it into a meal

homemade yogurt is also an option

Milky hot chocolates, custard, ice cream, yoghurt (depending on how much time you have), put a bit of it in when you're making mashed potatoes, bread and butter pudding, rice pudding, milk pudding, porridge, bread sauce... the list goes on, OP!

I wouldn't worry too much about the expiry date. You can tell by smell and taste when milk has turned, and it's usually a day or two after the expiry date.

You can freeze it. Just put it into containers with some space for the expansion when it freezes.
Even better, infuse it with onion, garlic and black pepper corns plus bay leaves beforehand and use to make béchamel or cheese sauce later.

You can make sweetened condensed milk which will keep in the fridge for a few weeks. Then you can use that in, tablet, fudge, ice cream or other recipes if you want to. I use the recipe on bigger bolder baking website , it's easy & pretty much makes it self really.
