Cheese sauce specifically for cauliflower cheese.
Any recipes which you recommend on how to make this.

If you Google the Good Food ‘Best ever macaroni cheese’ recipe, I really like this one. It’s got mustard powder in it, which gives it a bit of a kick.

The Delia sauce above is perfect, I've done it her way for decades. I've never done it the roux way since I discovered her recipe. The only thing I'd add is that I find 5 minutes not 10 simmering is perfectly nice too.

I made a lovely one on Sunday to go with roast beef. I put in lots of extra mature cheddar, some Roquefort and also some double Gloucester as I had some leftover

It was a bizarre comment. Maybe the poster meant you hadn't given a method or an exact amount of cheese, both of which are silly as the all in one method, as in Delia's, works perfectly, and cheese is surely to taste too.

A classic roux sauce, mustard powder, very strong cheddar and some feta. As much cheese as your arteries can handle.

Gosh, I only meant that some people prefer an actual recipe with defined amounts, e.g. weight of cheese.

Your way is the same as I make it, i really hate the mustard in it 🤮. Orkney cheese (the orange one) is my favourite to use or Galloway 😋

If you'd said 'That's a bit vague" people would have understood what you meant but I obviously wasn't the only one who had no idea what "Hand wavey" meant.
Never heard that expression before.

The classic recipe! A bit of lemon juice added makes it cheesier for some reason.

I have never weighed cheese in my life, I have an enclosed grater so when the cheese fills it that is usually enough 😀

For cauliflower cheese I add a bit of nutmeg and lots of white pepper as well as mustard. Gruyère is the best cheese to use if you have it. I never measure anything but always make a roux.

Quick version that tastes good!

pot of cream
pre grated mozzarella
pre grated cheddar
Colmans mustard powder

all just to taste.

bought grated cheese has potato starch in it to stop it sticking together. Acts as a thickener.

Sainsbury’s “Classic Recipe Collection”:
40g unsalted butter
40g plain flour
400ml semi skimmed milk
1/2 tsp English mustard
150g mature Cheddar, grated
pinch of freshly grated nutmeg
black pepper
Make the roux, gradually adding in the milk. Stir continuously until the sauce has thickened. Add the mustard, cheese, nutmeg and plenty of freshly ground black pepper. Stir.
