I need a sponge cake recipe that doesn't have butter in it!

I always use Stork or Flora. 6 oz flour, 2 big eggs, 6 oz stork, 6 oz caster sugar. Beat together

3 eggs
3 oz sugar

Whisked together until almost white in colour - increases in volume as well

Gentle stir in 3oz SR Flour and a teaspoon of Baking Powder

Pour into 2 prepared tins (grease then sprinkle flour & sugar in - cover all the surfaces then tip out)

Hot oven for about 12-15 minutes (If I remember right)

It is a whisked sponge - often a swill roll recipe is similar

I have a sue lawrence recipe that has a jar of mayo in it. I haven't made it but all her baking recipes are var good.

I don't use 2oz Lapin - I use one...honest

Maybe I should use 2 - haven't looked at a recipe book for it for years
