Samphire in my veg box

I prob have the same veg box and made this last night - it’s a potato, lentil, feta salad. Thank you! I have a different veg box now, but Riverford introduced me to samphire. I did an egg dish before, which was nice but underwhelming.

I've never heard of dark green speckled lentils! I'm guessing ordinary green lentils would work.

It's good to hear lentils and samphire work together - l'll try this next time, rather surprised I don't have the right ingredients in!

Thank you, this reminded me that I made fish pie regularly before I became vegetarian, and how much I enjoyed it. I've looked up possible substitutes and the Waitrose recipe, have smoked tofoo I have to use up today... An experiment!

I also get samphire n a veg box and love it. I do think samphire needs to be mixed with something milder. For a side dish:

We steam new potatoes, then saute them with butter, salt and a bit of garlic. Meanwhile briefly steam or boil the samphire. Add it to the saute pan. Toss with the potatoes, add more butter if wanted and fresh lemon juice to taste. It might need more salt, but samphire is salty.

I would say about 2/3 potatoes by volume.

I’ve seen a pasta recipe - think it was just samphire, lemony butter and pasta. Sounded delicious. Peas would probably go quite well too and offset the saltiness of the samphire.

I've had with gnocci a few times; just add butter, onion, garlic, parsley and the samphire

I really like samphire and would have it with a bit of asparagus and egg.

But I mainly came here to say that "Samphire in my veg box" gave me a "Lipstick on your collar" earworm! 😅

There is an Ocado recipe with sea bass I think that was delicious. I wonder if you could substitute the fish…..

Thanks everyone! Plans got disrupted last time, I found it works in a version of scrambled egg with mush, spring onion, cherry tomatoes, cheese... I have more arriving this weekend, so will look through the suggestions again, thank you.

I am really amused that a question about a more unusual item in a veg box led to disappointment that it wasn't a euphamism, and to an earworm...I did double/triple check I'd posted in the right forum!
