Does anyone have any quick and simple recipes without huge amounts of ingredients that you would have in the week on a busy night? I'm really struggling and looking for any inspiration!

We often make a bubble and squeak for the day after we have mash- literally just mash, and veg- I add some spices herbs and garlic and leek
We like cheesy pasta (made with Philadelphia cheese a splash of milk and grated cheese)
Spinach and chickpea curry
Butternut squash and feta pie
And aubergine and chestnut Ragu (Waitrose recipe)...

Pasta with a tomato sauce. Onion, garlic, tinned chopped tomato, a few herbs, some crushed red chilly to taste, chuck some capers and black olives in at the end.You should be eating it 30 mins after starting.

bean burgers ( drain the chick peas butter beans and tinned corn when you leave in the morning, blitz together with onion and flavourings , top with halomi- does need a mechanised aid to mush the beans quickly though )

Egg bhurji, basically scrambled eggs with whatever suitable veg you have (garlic, onions, tomatoes, spinach, but could do all sorts), spices, some lemon juice, fresh coriander and chilles if you have them, on toast or in a wrap. I often do egg dishes with a fresh fruit salad or melon slices.
