Hi all
I love things with beans or lentils in and of course they are very good for you. For example I like dhal and lentil-y curries when eating out. However, I rarely cook them myself. Therefore would anyone be kind enough to share their favourite recipes based on beans or lentils? I'm not vege so if they have a meat element that's fine.

Red lentil and coconut Dahl is fabulous. I use basically this recipe but don’t really measure anything. This amount of lentils is a lot, so I usually put less. More onion, use a full bowl of frozen spinach but I chop it because I don’t like it when it’s stringy, whole large tins of tomatoes and coconut milk. Water is added by eye, and you do need to keep stirring it because it sticks like a bugger. Otherwise but it’s hard to mess up and absolutely delicious.

Also home made falafel is a regular meal in our house. I don’t have a recipe but I can share how I make it if you like.

Amazing coconut dahl recipe that I got off Instagram (don’t let that put your off!). Just cook the onions, then add the spices and fry a bit, then lentils and coconut milk in and cook until it’s the consistency you want. So easy and makes plenty for the freezer. Ingredients:

1 medium onion, dice
4cloves of garlic, mince
0.5-1 red chilli, diced
1tsp ground turmeric
1tsp ground coriander
1tsp ground cumin
¼tsp ground nutmeg
1tsp paprika
2tbsp tomato paste
500g red split lentils, rinsed
750ml-1lt vegetable broth
250ml coconut milk

I've been making lentil/bacon and sweet potato soup recently.

Can't give you an exact recipe but-

Onion
Bacon (3 rashers)
Chopped sweet potatoes- 3 or 4
Red lentils 100 g approx
Knor chicken stock gel pot /water
White pepper
Blitz when cooked and a small swirl of cream or milk.

There some great recipes on here. Their book is good too.

And although their jars are more expensive than canned beans, they are absolutely delicious! Especially the chickpeas which are a game changer if you've only ever eaten supermarket canned ones.

My go-tos tend to be-
Chickpea and spinach curry (use the bold beans giant chickpeas, they are leagues better than others) or chickpea and sweet potato curry.
Black beans done various Mexican style ways - as refried beans, mexican style bean and tomato soup, black bean rice bowl (extra toppings being avocado, cheese, salsa, etc)
Kidney bean chilli
White bean and tuna salad
Chicken and white bean soup
Brown lentil Bolognese

Black bean enchiladas

I use any veg needing used up in the fridge but the other night I used -
2x tins black beans
1x red onion
2x red bell peppers
4x gloves garlic
1x tin chopped tomatoes
Squeeze of honey

Fried all that off with cumin, coriander powder, smoked paprika, chili powder and salt (Also added the same spice mix and squeeze of honey to a separate pot with a carton of passata and let it simmer)

Once the mix was cooked for around 10 mins, filled 6 large tortilla wraps with the filling, spread a little of the passata mix on bottom of baking dish, layer the filled wraps in the dish. Top with the sauce and loads of grated cheese. Baked for 20 minutes at 180°

We also have black bean tacos which is a family favourite

I always bulk out chilli with loads of beans; kidney beans, black beans and even baked beans in the sauce.

Ive been making an African inspired mince beef dish with chickpeas, ras el hanout spice mix and apricots. Served with minty cous cous or bulger wheat
