Roast chicken katsu - help me MN hive-mind

I have a gorgeous organic chicken on special to roast today. And half a jar of katsu curry paste leftover I need to use ups

Can I baste my chicken in katsu paste and roast it? What else would this recipe need?

I have never used katsu paste without coconut milk and wondered if anyone can predict if this will work

I don’t know what’s got into me recently - I am just craving spicy and Asian food endlessly.

We eat a lot of roast chicken (well, I’ve been on MN to know that’s the key to successfully feeding a family) and recently I’ve been experimenting (“Nando’d” the last one; Greek theme for the one before that etc).

I would mix some of the paste with butter and put that under the skin. Then pop the rest over the outside. Then do smaller cubed potatoes around it so they come out a bit like bombay potatoes. Baste it often and enjoy!

That sounds good at @mumonthehill . Especially because I really wanted to serve it with potatoes. I think I might chuck in some whole carrots and parsnips to slow roast too. How exciting I like an experiment!

The leftovers will end up in ramen soup for lunch tomorrow
