QUICK!!! How do I uncurdle hot creme fraiche?

It's in a pasta sauce with shellfish and spinach but it's curdled and looks horrid.

I don't think you can tbh. Have you tried taking it off the heat and adding a bit more?

try making a paste of cornflour and water and adding it. in future, add the cornflour to the creme fraiche first.

Not sure it's ben entirely successful but the extra thickness has hidden some of the curdliness.

Don't mean to be rude, but are you sure the creme fraiche is ok? I didn't think you could curdle it.

I froze it and it came out of the freezer separated after it defrosted.

I should have taken the blender to it before I added it to the seafood. that would have sorted it. Oh well, it's edible and doesn't look too bad. DP and DSs will never notice

Yes, it curdles as soon as it's frozen and defrosted.

I had cornflour in my crème fraiche sauce already but it still curdled. I read on the web that if I put it in the blender it would clump up so didn’t try that. Now I wish I had! Has anyone any new ideas ?
