I always gave my 2 sushi from a young age but if you're a real stickler for the rules I think the main issue is the salt - worth looking at as I was really shocked to see the salt in one teeny tiny bit of sushi. (love sushi, could just fancy some now).

Salt pretty much all from the soy sauce.

Am now desperate for a tuna maki roll. Humph. Will be forced to make DH take me to the fab place nr Swindon owned by Honda for lunch this weekend

no , I think if you look the rice is very salty too. I know when we made our own sushi at xmas for dh's birthday the rice required an awful lot of salt. Still, everything in moderation I reckon.

Ah, well I hardly use salt any more. I leave it out when making the rice.

that's interesting Geoffwode - I'd be interested in a less salty version - what do you use to flavour your rice? I love home-made sushi - it's the only time you get to eat as much of it as you actually want! we made gorge stuff at xmas with lobster and crab meat etc.

I just follow the instructions on the rice packet, but omit the salt (or just use a pinch if I'm feeling reckless). I think it's 2 tbs mirin, 1 tbs rice wine vinegar and 2 tsp sugar.
