Goat’s cheese pasta

I used to treat myself to Sainsbury’s goat’s cheese and pesto pasta. It’s no longer on sale. Any suggestions for an alternative? Massive treat for me. Also, I can’t make my own. I lack the skill. It was a lovely wee tortellini treat.

You can make your own from scratch but you can also buy either a plain base or cheapest cheese and tomato and add toppings.

To make dough for two large pizzas (freezes) use 3 cups bread flour, 1 tablespoon olive oil, 1 tsp sugar, 1/2 tsp salt, 1 sachet yeast and 1 cup tepid water. Mix together and kneed for 5-10 minutes cover and leave for an hour or until doubled in size, knock air out, split into two and roll out thinly (or hand stretch) into pizzas. To cheat I top with red pesto then goats cheese, red peppers (from a jar), mozzarella sliced and sliced red onion. Bake for 10-14 depending on how hot your oven is minutes until bubbling and base is cooked. It’s helpful to preheat the baking tray to hot and oil to get a crispier base

How about just using a short pasta, e.g. fusilli, then adding crumbled cheese & pesto to it after cooking & draining .

I can’t get it the same texture. It was almost crispy in the fresh pasta.
no other stores seem to sell it.
I’ll have another crack at it using firmer cheese.

Waitrose have a goats cheese and beetroot filled pasta which is amazing with a little melted butter and fresh mint!
