Over-ripe banana recipes

I have 4 over-ripe bananas so wondered if anyone has any favourite recipes please?

I’m the only one who likes bananas in my household so anything is good as long as it’s not a hugely labour intensive recipe or needs 101 ingredients.

I made a banana bread the other day. So easy.
125g sugar (I used a mix of white caster and soft brown, but any would do)
125g butter or Stork
200g SR flour
50g ground almonds (or if not, just add more ordinary flour)
pinch of sweet cinnamon and 2tsp of vanilla essence (both optional)
3 mashed ripe bananas
2 large eggs
bit of fresh orange zest (optional)
50g chopped walnuts - also optional

Cream the butter and sugar together with a whisk for at least 2 mins, then add the eggs then everything else except the chopped walnuts. Whisk until soft. Fold in the nuts, pour into a greased and floured loaf tin. Bake at around 175-180 degrees for about 40 mins.

If you want to keep it simpler, ditch the nuts and almond flour and just increase the flour by 25-50g. And the flavourings are optional too. I just like them.

Banana pancakes. Mash two bananas add one egg and half a measuring cup of flour ( can be sf or plain) depending on how fluffy you want, then fry with any oil in fist sized lumps until golden brown on both sides. Serve with anything you fancy from syrup to yoghurt. Quick easy breakfast or treat.

Smoothies! Bananas, milk, yoghurt and any other fruit you have lying around (raspberries work well). Blend. Enjoy!

You can also take them out of their skins and freeze them for future smoothies!

Mash 4-5 ripe bananas with a tin of condensed milk and 2.5 cups of SR flour. Pour into a lined loaf tin, stand in slow cooker with 3 cm of water in the bottom, cook on high for 2 hours, with a folded tea towel under the lid.

Mary berry has a really lovely banana bread recipe on the good food website. It uses 4 bananas too. Makes two large loaves 😁

You can freeze them until you want to use them.
