Ideas please for just 6 of us. Guests have requested chicken liver and smoked mackerel pates. What lighter possibly salad dish could I do alongside?
Beef in barolo is main course

It would pair well I think - it would brighten the chicken liver and do well with the smoked oily fish.

My chicken liver pate is something I do without a recipe really!
Remove tubey bits from 800g livers then soak in cold milk for an hour or two.
Slowly cook 2 large sliced onions in plenty of butter and a little olive oil for 30 mins or so until soft, sweet and not browned.
Rinse the livers and dry on kitchen paper, add to onions along with 3 chopped garlic cloves.
Cook for 6-8 mins until cooked through and only slightly pink in the middle then tip into a food processor.
Deglaze the pan with a good slug of brandy and about 150mls double cream then add to livers with plenty of salt and pepper.
Whizz until smooth and put in freezer trays or ramekins.
Eat within 3 days or so from fresh or freeze.
