Whats the best way to keep chicken nice and moist for sandwiches?

Have just cooked a load of chicken breasts and we want them in sandwiches tomorrow, but how can I stop them from drying out?

can I just mix it with mayo then to keep it soft and not crispy and dry?

Slice it and freeze it overnight, make sandwiches with it tomorrow and they will be thawed but chilled by lunchtime.

Nicer/easier version of coronation is mix mango chutney with mayonnaise.

Not tried it but apparently marinading in buttermilk before cooking makes chicken really moist and tender.
