Leftover pork loin - ideas?

Roasted with garlic yesterday, ended up quite dry so will need to have a moist recipe for the leftovers.

Love to hear your suggestions please!

Flatten some steaks out of it and marinade in soy, ginger, honey and oyster sauce. Fry it and have with rice and crucnhy veg

Make some gravy and tip a bit onto a baking tray, lay the loin in pan, ad a bit more gravy ober them. Make some stuffing and smooth the stuffing on top. Cover again with gravy. Bake in the oven for 30 mins and serve with buttery mash and veg. One of my favourites

I think the best thing to do would be to give it to me. 😜

stir fry: veg, soy sauce, bit more ginger. Chuck some noodles in.

Cheeky sauce made from a tablespoon of your favourite jam, 150 stock (half a chicken cube) a splash or two of balsamic and another of white wine or port. Heat and reduce to your preferred consistency. Voilá!

Pork loin with Apple, onion and cider sauce with mash and green beans!

We would make that in to fajitas.

-Stir fry

We usually use it in stir fry rice or noodles as previously mentioned. Or as a ramen topping/in a noodle soup. Otherwise, heated up in gravy for hot pork and stuffing baps (apple sauce optional)

We make pork bao buns, it's a jamie oliver recipe using hoisin sauce to mix it in.

Stuffing, applesauce, in a bun with red cabbage coleslaw, side of gravy. Sweet potato fries.

I usually make stir fry similar to those mentioned with leftover pork, but another option is to do a cider sauce.
