Favourite gluten free baking recipe?

I'm a pretty confident baker but I've recently been diagnosed with celiac disease so gluten free baking is my new norm. I'm looking for a Friday night sweet treat, what's you favourite gf recipe?

I usually halve the quantities and use a 1lb loaf tin. The carrot cake recipe needs a lot less butter cream IMO.

Becky Excell has a great range of recipes, all of which have worked well when I have used them! I find that recipes that are fruit / oil based work best as the increased liquid content balances out the lack of gluten, which can otherwise be a bit dry.
