I'm stuck in such a rut with food! So bored of the same old things but can't seem to find the enthusiasm to think up new ideas...

I read through meal plans etc but I'm a visual person and like to see real homemade meals for ideas, rather than the perfectly photographed meals on websites!

We're a family of five and cooking must be my most hated household task 🙈

This was something I made after Christmas with roast butternut squash, courgette, chestnuts, bacon and brie.

Salmon terrine

Smoked salmon
crem cheese
cherry tomatoes as a garnish

Line a ramakin with smoked salmon, leave any overlapping bits, chop the rest of the salmon and the cream cheese, salt and pepper and optional herbs, capers if you like.

Use this mixture to fill the ramekin, fold any overlapping bits in to the ramakin and turn out on to plate.

I made a simple cherry tomato salad with a bit of oil and vinegar but you could use other salads and of course you can also add bred.

The other one is a sort of asianish meal.

Belly pork slices
broccoli
garlic (1 clove fresh but frozen and from a tube work)
ginger, if fresh about a 1in sure but frozen works easily
soy sauce
choice of herbs and spices.

Steam the rice
To make the broth add ginger and garlic to a pan, I tend to use frozen. Add water and veg stock cube, then dd any other flavourings eg chilli, salt and pepper, extra garlic and / or ginger.

Bring to boil and simmer for bout 5 mins, then dd the broccoli or other veg for 5 mins. You can leave it longer if you prefer better done veg.

The belly pork.

OK honesty here I cooked belly slices for a meal and these were left over, I rubbed them in a mix of spices and then stir fried to heat through.

The soy sauce is just used as a dipping sauce.

Mini Yorkshire puddings, just use a tin with more and smaller holes.

I posted this on a recent thread - barleysotto with salmon

It was very easy to rustle-up as the barley was a batch-cooked (slow cooker) portion from the freezer and the salmon done in the air fryer.
