Vegetarian slow cooker recipes

Does anyone please have any tried and tested recipes, which ideally don’t involve tinned tomatoes or much/any pre-frying? I’m hoping for specific recipe links if possible, so that DP can follow them.

I bought a slow cooker and after trying all sorts of vegetarian recipes, gave it away. It really isnt suited to nice tasting veg food. They are designed for slow cooking of meat and the veg just turned to tasteless mush. And the liquid from them never cooked off.

If I was going to retry it, id make sure I at least sautéed the onions before they went in. Which kinda misses the point as by the time you've done them, you may as well do peppers as well and make a base which you can freeze and just pop out when you need a quick meal whilst you cook some rice or pasta.

I did use it for making caramelised onions once if I remember correctly.

Thank you. Tomato has no place in dhal invho! But you’ve made me wonder if I could stick my own dhal recipe in the slow cooker and then just do the final tarka in a pan.
