Stew rescue needed

Hi all. I’ve cooked a stew today for tomorroe but let it go a bit over. The meat is perfect but the potatoes, carrots and swede are on the mushy side. The gravy tastes perfect. If I boiled replacement potatoes/carrots and swede in stock, would that work if I picked out the mushy pieces and replaced them?

It sounds delicious. I’d be serving that as is it with Yorkshire puddings. Yum.
When I was a kid my Dad used to make a ginormous stew with all the left overs from
Sunday lunch. It was at its best on day 3 when all the veg has disintegrated into the gravy.

Don't pick them out! Mush them up and it thickens the sauce. Add more if you need to but the idea of stew is for it to be lovely and soft.

I make a veggie stew almost every week in the winter; this weeks was spanish bean and rice stew. It was lovely.

It’s actually a Scouse but Irish stew by another name. I used stewing beef and lamb shoulder and it might not be traditional but I added a dark ale. It is very, very tasty. Will be served with pickled beetroot and red cabbage and crusty bread. I won’t mess with the end result! Thank you all

This brought back memories of the way my mum made her stew. Beef, oxtail soup mix, all the spuds and veggies gone to semi mush, and topped with a round of pastry that we all got a triangle of to dip in the stew.

I can smell and taste it from here. 😊

Oh my, I’ve never had stew with pickled beetroot and red cabbage. Is this a thing? I love all these foods but never had them together

You could use an emersion blender which will hide some of the well cooked veggies without turning it into a soup.

I’m from Liverpool and Scouse is a competition here. Everyone says their nan/mum’s Scouse is the best! I will be making this version next time, not traditional but o think will be fab https://www.liverpoolmuseums.org.uk/stories/best-scouse-recipe

So, this is for a “Scouse-off” at my local pub, 4 of us bringing a Scouse, one will emerge the winner! Dumplings and Yorkies would definitely be served if we were eating at home! 😋
