Gluten free cookie recipe

Are there any coeliac/GF MNetters out there who have a simple ish GF cookie recipe that is simple enough to bake with young dc?

We have done bread, brownies and muffins, which are easy enough. I tried a few recipes but they are too biscuity, it's a 2026 ambition of mine that we perfect a classic cookie recipe. Is such a thing even possible with GF flour subs?

Bonus points for use of an air fryer. Please only share a recipe you know and love?

thanks pp, we've given those a go, we threw in some choc chips and that seems to be a win with the dc. Might be a good one to batch up once a week and keep in the biccie tin. Thank fully no nut allergies, we have a few to be getting on with, I think without nuts I'd go....nuts....
