I'm cooking for a crowd tomrw, just chilli, baked potatoes, salad and corn on the cob.
How can I make this more interesting?
Also any ideas for a pudding very much appreciated.

Chili flakes and lime juice

Cut each corn into quarters down the middle (a cross-shape DOWNWARDS so you have 90-degree angle 'ribs', not slicing the thing like a cucumber) and roast in the oven with a tasty rub - easy to eat and less intimidating than a whole one (the chili and lime combo is good - I'd add paprika and cumin or something with a jerk vibe - suggested recipe below but I think quartering is key here).

Lots of butter.

Roast or grill (can parboil first) with butter, chilli flakes and paprika

Wow, that was sorted quickly!! Thanks so much.

If you're making chilli I wouldn't put chillies on the corn, that means people who can't eat spicy stuff can only have baked potatoes and salad.

Loads of butter is the best thing on corn on the cob!

Quarter them and make corn ribs?
use some decent seasoning and plenty of butter with garlic.

I like corn ribs instead of full corn cob when we have guests because they’re less awkward to eat 🤣

Edited

I'm going to look completely thick now but do you eat the whole "corn rib" or do you still nibble off the kernels?

Corn ribs. Toss in oil and spices, 8 mins in air fryer at 190. Dip optional. Nibble the kernels off!

Leave some plain or just with a grind of black pepper to keep the dairy free people happy. Personally I like a good garlic butter on mine.

ZenNudist · 29/01/2026 16:23

I halve them and roast with cajun seasoning and lightly oiled in some foil

piano55 · 29/01/2026 16:29

I always put Nandos peri-peri salt on mine. So good!

I love corn on the cob boiled and then fried off in loads of butter and whole grain mustard.

Hmmm, not had it for years! Might get some, thanks. Thanks for the inspiration 😊

Suddenlyfeelingold · 29/01/2026 21:32

Omg, elotes are my favourite thing!

TheAutumnCrow · 29/01/2026 21:37

I love corn on the cob, but plain with a little butter. I think a few people might? Probably best to leave a few cobs plain or have the chilli dip on the side.

I like the idea of quartering them!
