I need to expand my slow cooker repertoire, any ideas please? 🍗

So far we tend to have the below on rotation, but I would love some more ideas please! 😊

I have bastardised a Poppy Cooks recipe and it's going down really well here as a version of a fakeaway Kokoro chicken and rice!

Deboned, skinless chicken thighs. Season and brown off briefly. Into the slow cooker. Make up a sauce of honey, soy and Gyochachang (spelling?). I go for roughly 1 part gyochachang, 2 parts soy and 3 parts honey but adapt to preference. Add some garlic. I might add some ginger next time too.

High slow cooker for 3 hours or low for 6.

Remove chicken. Whiel resting, put the sauce into a saucepan and simmer to reduce it, then mix it back in with the chicken. I need to figure out a way to reduce it enough to turn it more sticky - maybe I need a higher ratio of honey? But either way, it's delicious and we serve it with rice, topped with spring onios and sesame seeds and broccoli on the side.

I do lemon chicken with butter beans - delicious. Browned chicken drums/thighs/legs, caramelised onions, tin of butter beans, chicken stock and lots of fresh lemon juice. Add whatever other veg and herbs you like.

My favourite thing to make in the slow cooker is lamb.

Pan sear a half leg of lamb. Throw roughly chopped onions, carrots and a few crushed garlic cloves into the pan and fry for a few mins. Add in one of the mini bottles of red wine, 3 knorr rich beef stock pots (trust me), and a few sprigs of fresh thyme. Transfer to slow cooker and then top up with boiling water until the meat is mostly covered, and cook on high for 6-8 hours (by which time the bone will just slide out). Remove the meat, strain the liquid and then boil it in a pan to reduce it down until it is a beautiful, rich gravy ( takes half an hour or so). Serve with cheesy mashed potato, Yorkshire puds and roasted carrots. Always goes down a storm.

I second the suggestion for the bored of lunch cookbooks. Also BBC good food have slow cooker recipes if you search for them.
