Does Flour go out of date?

Am new to this board - does flour go off? Can I use out of date flour or is it a no?

Want to make a white sauce for my lasagne tomorrow...

Is it a BBE date? I would have thought it's OK for a sauce but maybe not great for a cake. Edible but not at its best.

It does go off, the smell changes and it might get dust mites (you can see them as dark specks moving in the flour.)
If its not too far out of date you might get away with scraping off the top few inches and using some from the bottom of the bag.

It does, but the rate at which it goes off varies quite a bit. How expired is it?

You can generally tell if it's off by the look or smell.

Well eventually the beetles will hatch.

The gluten in it tends to break down wuth time but would be fine for a sauce.

Bread flour definitely does. I have made several miss-shaped loaves with slightly out of date flour.

Check for weevils you can see them crawling. Look like black pepper

Self raising goes off, but not like a switch, if it's well past bbe it will need some baking powder. Plain I've never had a problem with, but I'm talking 6 months out of date rather than years. The obvious thing to look for is mites and weevils, you can get those with flour that's still in date.
