Lemongrass uses other than in rice or Thai curry

Sorted out my spices yesterday and found we have 2 jars of lemon grass. I use it occasionally to flavour rice or in various Thai curries but no other ideas.
I appreciate I can google for recipes but the most practical suggestions tend to come from MN.
So how do you use lemongrass please?

It is nice used as a marinade for a roast chicken with herbs- not just thai flavours- as it gives a subtle lemon hint. I have also used it to make ice cream which was interesting and refreshing.

It can be used in soup. If you don’t make your own soup, you could add it to tinned carrot and coriander, or chicken noodle.
Jamie Oliver has a lemongrass mojito recipe.

We make a lot of soup, hadn’t thought about that. Do you just crush it and add it whole? And do you remove before blitzing the soup?

It's good in a fish parcel with spring onion, ginger or chillies, soy etc. Gives a fresh tang to the baked fish.

The lemongrass soup recipes I use ask for it to be ‘roughly bashed’ or ‘bruised’!

It’s very nice with pan-fried tilapia. Use mortar to smash it along with chili, garlic, peppercorn (sichuan peppercorn is best) and marinate with soy sauce and sugar. Yuuuuum
