I'm trying to come up with a bank of meals, vegetarian meals in particular, that don't need recipes. Things I can just easily put together; gnocchi, tomato sauce and parmesan for instance. Does anyone have any ideas they'd like to share?

Pesto pasta with broccoli ~ boil the pasta for 5 minutes then add broccoli florets and boil for another 5 minutes. Drain, stir in pesto and top with grated parmesan and toasted pinenuts.

I love this and it's so quick and easy

Tray bakes are so easy, just add the items at the correct time.

Pasta bake ie pasta or tortellini with tomato and vegetable sauce. Ring the changes by adding meatballs or prawns, chicken, or any variety of sausages.

Pitta or naan bread pizzas
Tacos - tin of mixed beans in spicy sauce, avocado, grated cheese etc…

ooh yes, that’s a good one! Also nice with green beans.

Yes and again, something you can just pull together very quickly.

You would have pre made and frozen the sauce so after that its straightforward and quick.

A couple of years ago my DB and I met up at a country pub ~ we ordered "Soup & Ploughman's" We each got a small soup bowl in the centre of a large plate with crusty bread, cheese, half a scotch egg, crisps and chutney. It was really lovely and I often replicate it (with vegetable quiche instead of the scotch egg)

Boil tortellini for 2 minutes only. Microwave a pot of fresh tomato sauce. Put tortellini and fresh spinach leaves into an oven dish. Pour sauce over. Poke in some mozzarella and grate over a vegetarian version of Parmesan. Bake for 20 minutes or so.

Pasta / pesto / sliced red peppers and red onions/ olives / basil / feta

pitta bread pizzas - I use red pepper pesto as the base

Pitta / falafel / salad / minty yoghurt/ chilli sauce

roast cauliflower in air fryer / mix with spinach leaves in oven dish / add pot of fresh cheese pasta sauce and sprinkle with grated cheese / bake - best with jacket spuds

Love this. Sainsbury’s used to do little vegetarian pork pies which we used to have as part of a Monday night ploughman’s with fresh bread. Sadly they seem to have disappeared.

And I still really miss the scotch eggs and pork pies that Holland and Barrett used to sell.
