Veg lasagne recipe

we are a meat loving family and very rarely eat vegetarian food although we do eat plenty of veg we just tend to have meat based dishes.

Saying that I am looking for some different meals and wondered if anyone has a good veg lasagne recipe ? Happy to have lentils in it also but vegetable wise would prefer peppers carrots courgette maybe aubergine ?? probably a aka would like it a bit chunky if that makes sense ?

This is good, but when I make vegetarian lasagne instead of putting bechamel on the top I wilt some spinach (fresh or frozen), drain well, mix with ricotta and grated nutmeg, spread across the top layer of lasagne sheets and then sprinkle with lots of grated Parmesan and possibly also blobs/slices of Mozzarella. The vegetable layer is derived from the Mediterranean roast veg of the Delia recipe below. Capers and olives make an excellent addition, as she specifies. I usually add mushrooms as well which improves the texture. (Plus, we all love mushrooms.) I don't use cherry tomatoes. I roast all the other vegetables and at the end mix in a tin or carton of chopped tomatoes and some tomato puree or sundried tomato paste.

(I should add that we're not vegetarian so happy to eat Parmesan. It contains rennin so a real vegetarian wouldn't eat it. Not sure about ricotta and mozzarella.)

Yup, the Delia Mediterranean vegetable recipe, which I just do as the recipe states. I always do extra sauce white sauce though.

I do similar to @Gasp0deTheW0nderD0g .I add nutmeg, basil and oregano to the ricotta mixture and put a layer in the middle of the lasagne too. It goes down well with my meat eating dns.

The veggies you suggest will all be fine though I’d grate the carrot. You could also add squash, chopped broccoli?

We make this one. It’s delicious. Do be mindful about hard cheeses as most aren’t veggie. This recipe doesn’t need any, but if you use a recipe that does you can get a veggie hard cheese in the cheese aisle.

So many nice recipes to try ! Thank you everyone really looking forward to trying these out . Funnily enough @Gasp0deTheW0nderD0gI am currently prepping a delia recipe albeit for a ham joint (so not at all vegetarian but still nice !) I always find her recipes fairly straightforward and fingers crossed turn out well x

I was going to say the same as @purplemunkey it’s really good, with a bit of heat from the chillies. Just wish they were a bit less faffy to make!

Mine has 2 different fillings, one is a tomato with roasted Mediterranean vegetables and basil sauce and the other is a spinach and ricotta, you alternate layers so tomato pasta spinach pasta tomato pasta …. Top with bechemel sauce sliced mozzarella, grated provolone and Parmesan

This one has never failed me. It’s delicious! I make a little extra tomato sauce than it says and add some cheddar and Parmesan to the top before baking but follow the recipe to the letter other than that

This is really nice…a bit different….Hugh does a Kale and Mushroom one too…also very nice…but quite a long way from the mediterranean vibe though.

Yes, it is a bit of a faff, but worth it. I’ve always got a few portions of leftovers to reheat for lunches too.

There are quite a few mentions of Parmesan up thread - this usually isn’t vegetarian as it has rennet in it. Make sure you get a vegetarian one if you need it. I use Merchant Gourmet lentils as my ‘mince’. I make a sauce with onion, diced carrots, red pepper, courgettes, garlic, tinned tomatoes, tomato puree, red wine, oregano and thyme. Then an add a sachet of lentils. Meanwhile I roast red onion, mushroom and red pepper chunks. I mix these in with the cooked sauce for a bit more texture.
