Quiche and frittata recipes

Does anyone have a recipe for really flavourful quiches and frittatas please? I find many recipes just so bland unless they have loads of cheddar on them.

Would be good if I can adapt them to make them low carb I.e can be made without a pastry case etc.

A really easy quiche =

grease your tart tin and put in ready rolled shortcrust pastry / trim
stab it with fork a few times
put in some dollops of caramelised onion chutney and spread it around a bit
top with grated mature cheddar
pour over 3 eggs beaten with a dollop of soured cream, salt and pepper and a pinch of dried thyme
bake it on a pre-heated baking sheet for a nice crisp bottom without any blind baking

I love a quiche with crab, bacon and asparagus … (1 dressed crab for the whole quiche, and pre cook the bacon and chop) … thank me later but it’s YUM!

The term "crustless quiche" really annoys me; no pastry = frittata.
.
I use all sorts of veg in mine - either leftovers or lightly steamed - plus herbs, perhaps ham, & I do like cheese but it's not essential.

Couple of potatoes, boiled and cubed.
courgette, onion, peppers, garlic, chopped smoked bacon. Tomatoes, sliced. 3 eggs whisked, black pepper, pinch of smoked paprika.
fry everything gently until softened, then pour over eggs, place frying pan in oven, cook until gently solid eg not rubber!
serve with a salad or crusty bread.

I make a frittata with chorizo, onions and potatoes. Roast the parboiled potatoes and the chorizo together so the spuds take on the flavour and it’s delicious and hardly needs any cheese. Not particularly healthy though if that’s what you’re after.

I always brush the inside of my quiche with egg white and bake for 5 minutes or blind. Stops a soggy bottom.
I never make anthing falvourful, but often flavoursome!

If anyone wants a lazy fake Spanish omelette, tinned new potatoes work okay. Slice them and add to part fried onions. Fry them up and add some dried thyme and good paprika.
