I'm doing 1 week of evening meals, with 1 extra as not sure when I will be able to get to shop again.
I'd like to not have potato 3x though but am struggling to come up with an alternative. Any suggestions?

Baked Battered Fish, Potato Wedges & Peas
Creamy Vegan Chicken & Broccoli Mash-Topped Pie
Cheese & Spinach Corn Tortilla Lasagne
Mushroom & Cheese Polenta Casserole
