Cooked beef I froze on Boxing Day… what am I going to do with it now?!

We had a lot left over. Really delicious rib beef that I couldn’t use but couldn’t bring myself to throw away so I just froze it. But now what?

If I defrost it could I make it in to a stew? It would be perfect in this weather.

I’ve just turned mine into a beef curry with lots of peppers, chickpeas, carrots and onions in it. It will be frozen in portions and served to my dad with brown rice and naan (I eat a lot of soup and it’s not substantial enough for Dad).

January is the only time I really enjoy batch cooking rather than it being an annoying chore. So many Christmas goodies to use up and repurpose.

I just turned my beef leftovers into a cottage pie. It was great. Put in carrots, celery and onions into beef and gravy mixture. I cut the beef up into fairly small chunks. Worked well with seasoning and creamy potatoes on top.

If you've still got the gravy, I'd just gently re-heat the slices in it for another roast dinner.
Sounds too good to be curried or added to a stew.

My kids made ours into a stifado. Was delicious. So beef, baby shallots, red wine, red wine vinegar and cinammon.
