Looking forward to seeing some old and new planners.
After two beens of cheese and cake I’m looking forward to some normal food!

Friday: lemon asparagus risotto
Saturday: mushroom & goat cheese tart
Sunday: Tofu Rogan Josh
Monday: Pesto beans on sourdough
Tuesday: peanut noodles
Wednesday: harissa tofu
Thursday: pasta e fagioli

Not massively exciting this week

Tonight: MASSIVE salad 😉
Tomorrow: Greek pasta bake
Sunday: saag paneer
Monday: jacket spuds
Tuesday: veggie burgers and wedges
Wednesday: chilli or tagine from the freezer
Thursday: enchiladas

I travelled, so plans are upended again.

I had the ribs on Thursday as the ham hock was too big and I couldn’t leave leftovers, so I’ll use that when I am back.
Last night, as DH had nothing in the fridge, I bought a chicken and spatchcocked it to roast fast, with potatoes roasted in big chunks (while I went next door for a catchup, hug, and glass of Prosecco before DH got home from hospital) and some asparagus and french beans poached at the last minute. He really appreciated a proper hearty meal.

I had planned to do a chicken curry tonight but the local supermarket doesn’t sell thighs anymore. But there’s plenty of leftover chicken so I might just do a stir fry or risotto.

Tomorrow I am back in the apartment - I managed to buy eggs during the week so probably pasta, bacon, mushrooms and a carbonara type sauce. Or bring back the blue cheese languishing in DH fridge and make a Gorgonzola-type pasta.

I am travelling back again on Friday, so I need Mon-Thurs dinners (2 will involve ham hock), that don’t need food shopping. I have spag Bol sauce in the freezer.

My options are limited at the inner due to lack of time to shop when groceries are open and a lot of weekend travel. I’m back home for next weekend too, and the last weekend in May. But I should have a weekend in the apartment in between so I’ll end up almost emptying freezer next week too (starting Monday 18th) but the promise of full fridge/freezer/cupboards the following weekend and some time to make nice things. Or at least, healthy things with lots of veg.

Made kedgeree for me and DD for brunch yesterday. I haven’t had it for I don’t know how long but will definitely start making it more often. DD made us falafel bowls for dinner.

Today: Aubergine, tomato & halloumi pie, salad
Mon: Veggie sausage & lentil casserole, sautéed potatoes
Tuesday: Pasta alla Norma
Wed: Potato cakes, poached eggs & smoked salmon
Thurs: Rice & bean burritos, salsa, sp wedges
Fri: Just me so I’m thinking a little cheeseboard and wine in front of the tv Smile

This week.

Chicken and broccoli one pan lasagna (our thread favourite from Insta!) which was supposed to be last week but didn't happen.
Pork tacos
Fish with Beans and new potatoes and some greens
Cabbage, pancetta and pine nut pasta
Bobotie and rice

I have a rice glut so should really be prioritising curries etc but just don't really feel like them at the moment. Might start experimenting with some of those social media one pot backed chicken and rice dishes.

Picking up after tomorrow's planned eurovision buffet

Sunday: Roast pork shoulder with beans and chard
Monday: Korean-style stir-fried cabbage, topped with some leftover pork
Tuesday: Black bean and vegetable cheesy bake
Wednesday: Out late for work. DH will forage in the freezer
Thursday: Sausage and cabbage rice
Friday: Spag bol
Saturday: Aubergine curry

Sweet and sour chicken with rice
Spaghetti and meatballs, although might try convert the meatballs to something else for DS who has a weird issue with both bolognaise and meatballs on spaghetti. Maybe with rice?! Grin
Sticking with rice theme - perhaps my kokoro chicken knock off done in slow cooker.... with rice!

I cannot remember what I had last week, except that the ham hocks did 2 dinners (with roasties, and with pasta). I was supposed to go home Thursday but there was too much going on and dd is still in hospital so told me stay here and come when she’s home (unlikely this week and. I’ll be there in 2 weeks definitely).

I did a proper grocery run on Thursday, and had defrosted duck to use up Thursday night (3 pieces froze stuck together so I have salad toppings frozen again). I roasted a small whole chicken on Friday which I’d spatchcocked, but done very traditionally plain. With asparagus and some old potatoes roasted (they were too old really). Last night I had leftover chicken with cauliflower cheese (I put mustard and some blue cheese into my cheese sauce when it’s for cauliflower - and have a second portion frozen for another night), and some parmentier style potatoes that worked better with almost the last of the old potatoes. I also made stock with the carcass so most of the rest of the chicken (it was very small and I also had sandwiches for lunch) will be in a risotto tonight and a salad on Monday lunch.

Tomorrow will be a pasta bake with sausages à la campagne in meatballs and roasted veggies ina HM roasted tomato sauce.

Tuesday will be something as I travel for a work thing.
Wednesday salmon and asparagus (while it’s in season)
Thursday chicken thighs stuffed with feta and wrapped in bacon and potato croquettes and roasted courgette (still debating the bacon part).
Friday will be a pepperoni and mushroom pizza
And I may have a lovely steak dinner on Saturday.

Slightly boring, but I have a lot going on at work as i manage 25% of my team being pulled as we get to crunch time on our big project, DD still not home back home, and an email on Friday that my landlord here is selling so I may need to move for my last 12-15 months (just when it is critical to not have chaos in my life to manage work chaosness…). So good hearty food, with plenty of veggies, but easy to make, for the next few weeks. And use up cupboards and freezer stocks (JUST after I refilled them!).

Tuesday, chilli and baked potatoes with cheese and sour cream
Wednesday, chicken and mustard tagliatelle
Thursday, pork and bean stew with garlic bread.

Thursday - South Indian garlic chilli chicken, rice, naan, kachumber
Friday - Gochujang Beef noodles (slow cooker)
Saturday - Beef taco, guacamole, sour cream and salad
Sunday - Gammon, cauliflower cheese with leeks, peas and new potatoes.
Monday- Lemon pepper chicken skewers with potato skins and salad
Tuesday - Coronation chicken pasta salad.
Wednesday - Not sure it's forecast to be very hot so might eat out or just have sandwiches.
