Help needed! Bitter stock!

Making a chicken stock for some healing soup later, I’ve made chicken stock countless times, and it’s always good if I say so myself.

just had a taste (got another hour and a half to go) it’s as bitter as! Horrible taste.
I used whole shallots trimmed and skin off as I didn’t have an onion. Plus I added a broccoli stem, have removed these and added a little squeezed lemon as I’ve read it helps.

Any other tips please? Or do I just bin it and chalk it up to experience?

I think it's the broccoli, I never add green veg to the stockport.
Can't think of anything to improve it, I hope someone else can.

Try adding something sweet like a chopped apple and summer again. You can staring out any chunks of apple at the end. Also add some butter.
Just to note tbough any green veg like brocoli, cabbage, kale etc shouldn't really be used in a stock.

No idea what you should do now but thats a good bit of information that broccoli shouldn't be used for stock.

I shall never put broccoli stalks in again that’s for sure!
It was saved by some fresh lemon juice, a little ghee and a chicken stock pot which I was loathe to use but glad I did.
I added extra carrots and half a turnip to the soup which I think also helped.

Stock needs to gentle simmer not boil, or it can get bitter.

It was on simmer, same as I always do, apart from the broccoli stalks!
