Have friends coming over tonight. I intended to make these prawn scotch eggs as a canapé. However they are not working at all - the prawn mix is way too wet to form around the eggs and when I’ve tried frying bits of it to make kind of fishcakes it’s still really wet in the centre even when the outside is nicely cooked. There’s like £12 worth of prawns about to go in the food waste 😭 Any ideas what I can do?

You mean to the prawn mix? I added a bit of flour and it hasn’t helped and I’m out of breadcrumbs.

Squish the prawn mix into small disc shapes ( fry , if uncooked )
let cool and put on a little cracker
prawn bites

also could mush the egg mix up and do the same in different cracker

not what u intended but easy enough

Frying it is not working 😭 Also I’m making blinis as well and can’t be doing with frying two lots of similar things. I think I must just serve the quail eggs on their own and try to turn the prawns into fishcakes with egg etc tomorrow. What an absolute fucking Turkey of a recipe. I’m a competent cook but there’s just no way this was going to work.

I’d just revert it back to prawn toast. Bread, sesame seeds, done.

Cook them in a hot oven or AF as fishcake things. Flatten them down a lot.

Thanks all. There is no ‘them’, it never got past mush in a bowl stage 🫠 Anyway a problem for tomorrow I think.

UPDATE! I cooked the prawn mush until no longer raw and a bit less wet and added it to egg fried rice with pork and cashews as a kind of prawn sauce. The rice absorbed a lot of it and it tasted epic! I wouldn’t do it again but I’m thrilled it didn’t go to waste.
