Me. I am gorgeous.

Put fresh cod in foil and squeeze on the juive of half a lime. Sprinkle liberally with black pepper and sea salt. Wrap in the foil and back in the oven until cooked. Serve with New potatoes and mangetout - OR noodles and peas.

I do a mediterrenean style dish
1 red pepper deseeded and sliced
1 medium onion, thinly sliced
3-ounces fresh baby spinach (half a 6-ounce bag)
1 pound cod fillets, cut into four portions
1 small courgette,
thinly sliced cremini mushrooms,
1 can chopped tomatoes
a handful of black olives
1 tsp dried oregano
1/3 cup dry white wine
2 tbsp fresh lemon juice

Preheat oven to 200 degrees. Place onions and spinach in the bottom of an 11-inch by 7-inch baking dish. Lay cod on top. Scatter courgette, peppers, olives and mushrooms on top of fish. Add canned tomatoes, oregano, white wine and lemon juice. Cover and place in oven for 15-20 minutes, until cod flakes easily with a fork.

I aint gorgeos, but I do have a few cod recipes.

cod caramba - mexican style with courgettes and a crunchy tortilla topping
indian style - yoghurt sauce and onions
easy roast fish - roasted with veggies and tabasco.

cod caramba is a favourite with the kids.

Here, a bit more healthy

COD WITH CHORIZO AND GREEN LENTILS
Pan fry some cod fillets, keep warm.
Chop some chorizo into small pieces and fry, with some chopped up spring onions, garlic clove, chopped. When chorizo has browned, add some chopped peppers from a jar, drained can of green lentils, some lemon juice and some chopped parsley.
Eat with the cod - scrummy!

If cod is really fresh, you should just breadcrumb it and fry in butter/oil, and squeeze lemon over. Too good to waste it by adding other flavours.
