What Christmas leftovers do you have left and how do you plan on using them up?

We have a crazy amount of vegetables left after stocking up on the Sainsbury’s 15p veg. Mostly parsnips so I plan to make a creamy parsnip and lentil curry tomorrow.

lots of cheese left which I plan to make a batch of broccoli and Stilton soup and a batch of cauliflower cheddar soup to go in the freezer for lunches in January.

Used up the last of the turkey today in sandwich’s for kids lunch.

What do you plan to do with any left over Christmas food if you still have any?!

Large amount of goose fat, now in little boxes in the freezer for future use for roasties.

Goose meat frozen ; some for another roast dinner, odd bits for a pie, both covered with gravy.
Stock from pressure-cooking the carcase will be used for making minestrone with various veg & some pasta.

We're not doing too badly overall.

Cheese, biscuits, and cold turkey tonight for dinner, and there's half a trifle left, we'll make a dent in that later for pudding.

I sent MIL home with a big chunk of Christmas cake and some cheddar (her favourite). There's about half the Christmas cake left, a wedge of Oxford Blue we've hardly touched, and some smoked trout in the fridge. That's got a decent use by date though so it'll keep for New Year's Eve. So will the panettone and the pack of frozen pigs in blankets.

Apart from that it's all chocolates, nuts and crisps which just means we don't need to buy any for a few weeks.

Nothing left. On Boxing Day I chop everything into small pieces and roast it in the oven. We then have it as a bubble and squeak hash. We love it almost as much as our Christmas meal and i deliberately cook extra on Christmas Day so we have enough for our Boxing Day meal .

Our dog has been remarkably good at hoovering up leftovers.
