Veganuary - recipes without fake meat, tofu etc

Can anyone recommend some tasty vegan recipes (dinners, lunches) that don’t include:

-fake meat
-fake dairy
-tofu, tempeh and the like

I’m planning to try a vegan diet for January and looking for inspiration.

I’m veggie but not a great fan of meat substitutes. We eat a lot of Indian inspired food plus veggie chilli etc
This winter I’ve been making a gnocchi and lentil ragu which sounds like an odd combination but is bloody lovely

Vegan diy or store bought; dumplings, momos, perogies, nachos. veggie wraps with roasted veg, chickpeas, shredded carrots/beets/red cabbage, hummus. Panele sandwiches but add your extra favourite sandwich/burger toppings as most recipes are plain. Polenta creamy with sauted veg & beans. So many soup options; barley/mushroom/root-veg, thick pureed soups (can puree white beans to make more filling) like potato leek or carrot squash, or a variety of chili variations (to make less heavy just add your favourite veg minced up like cauliflower, carrots, mushrooms, kale etc)

Tofu is so good for you, as is tempeh. Tofu is so versatile, have you tried it cooked properly?

Absolutely. Silken tofu is remarkably versatile. Tempeh and tofu are not fake meats and there are loads of ways to cook them so they taste good. Plus they’re high protein and versatile.
