Parsnip soup recipe?

Does anyone have a nice one? I have two bags that need using and I'm not particularly keen on them roasted so thought I'd give a soup a go.

I'm already stocking up the freezer with other soups over the next few days. I'm making an old fashioned tattie soup, carrot and coriander, a green soup involving sprouts which I've not quite decided on yet, lentil and bacon and a curried tomato and pepper soup so something a bit different would be nice!

I made the BBC (not good food but the normal BBC website) curried parsnip soup recipe - didn’t bother with the vegetable crisps to top it - and it went down a storm in my household. Was taking advantage of the ridiculously cheap prices on parsnips right now so bulk made some for the freezer

This isn’t bad I sometimes replace the carrots with cooking apples. I also use tinned coconut milk instead of double cream. I can’t digest that much cream!

I just made BBC Food Parsnip soup. I didn't have croutons but it was easy and delicious. I used less chilli flakes because I don't like anything too spicy.

I agree. This is a lovely recipe.

Double cream, a blender, salt pepper a tablespoon of honey and as many parsnips as you can be bothered to peel and chop.

I usually just lightly fry chunks in the pan for a while rather than properly roasting first and don't bother with cream

I second this. I’m not keen on parsnips, and loved this soup!

Thanks all! Love the sound of the curried parsnip soup, think I'll give that a go! I may try it with coconut milk instead of cream 🤔
